Vegetable Diet
The basis of this diet is made by vegetables. Recommended vegetables: marrows, cabbage, carrots, a green string bean, a broccoli, paprika, a pumpkin, a radish, green salad, cucumbers, chives and onions, various greens and a little bit of boiled potato.
All we know that vegetables are useful and necessarily should be in a diet of healthy food. But still it would be quite good to refresh our mind, what benefit receives our organism from their use.
Cabbage
According to one of legends, Zeus, working on an explanation of two inconsistent sayings of the oracle, from terrible over strain was dripping with sweat. Some large drops have rolled down from a forehead of the father of gods on the earth. From these drops the cabbage had grown. The cabbage represents special value as source of vitamin C which can be present at it in the same concentration during 7 – 8 months. Cabbage contains salts of iron, potassium, sodium, calcium and magnesium, vitamins A, Ð’1, Ð’2, Ð’3, Ð’6, Ð’9, Е, Ð, Ð Ð , and also sulfur, phosphorus, iodine, cobalt, manganese, copper, molybdenum, nickel, chrome, zinc. Fresh juice of cabbage contains anti ulcer vitamin U and various substances which promote healing of ulcers. Caloric content of cabbage is so small that it is possible to eat it without any restrictions: 100 grams of crude cabbage contain 24 kcal, in steamed – 15 kcal.
Marrow
Homeland of marrows is America. Thanks to Columbus in XV century these vegetables have got overseas to Europe. But for long time, for example, in Italy, marrows were used exclusively in the decorative purposes, as food they were tried only in a XVIII century. Marrows contain proteins, fats, carbohydrates, cellulose, sugar, vitamins C, Ð Ð and others, and also mineral salts.
Onions
The onions are rich with iron, potassium, in it a lot of ascorbic acid, there are B and Ð Ð group vitamins, and also carotene, volatile oil and 2 % of protein. Scientists consider the use of onions of 7-10 kg annually by each person is optimum. The onions perfectly operate on brain cells, preventing their aging.
Paprika
The paprika native land is rain forests of the South America and the East India. It has got to Europe in XV century. There it has accepted enthusiastically, it not only has changed usual recipes of the European dishes, but even traditional cuisines of China and India. Paprika is rich with carotene, vitamins Ð and C. Mellow paprika contain vitamin C the same amount as in a black currant, and carotene substance in it is close to carrots. Scientists of Japan had been made disclosure: aroma of pepper helps growing thin as stimulates allocation of substances in human organism, helping to burn fats.
Tomato
Homeland is the South America, in Europe has appeared in the middle of XV century and long time was considered as decorative or indoor plant. It didn’t use in food, considering inedible or even poisonous. In tomatoes it is a lot of sugar and ascorbic acid, there are important vitamins – Ð’1, Ð’2, Ð , K, carotene, and also salts of potassium, phosphorus, iron, organic acids. One more substance is containing in tomatoes – lycopene. This organic substance is very strong natural antioxidant. It is surpassing such famous “hunters of free radicals”, as vitamins C and Е.
Radish
As radish native land Egypt and China are considered. From Egypt the radish has got to the Ancient Greece where became very popular. In the days of celebrating devoted to Apollo, Greeks presented three main root crops to his altar: a radish, a beetroot and carrots. Thus the radish has been cast from gold, a beet – from silver, and carrots – from tin. Ancient Romans used a radish as antidote at poisoning with mushrooms. The radish contains ascorbic acid, carotene, vitamin Ð’1, up to 5 – 6 % of sugars, cellulose, Phytonzide, strong bactericidal substance lyzocim, choline. Enzymes, micro elements such iodine, sulfur, bromine, magnesium, potassium, sodium, iron, phosphorus, sulfur essence and other substances.
Green salad
Lettuce is considered as the ancestor, in a wild kind growing almost on all continents. Ancient Greeks daily used lettuce, they were attributing it ability to make sober after drinking wine. Among green colleagues salad is appreciated especially, its green leaves are simply stuffed by vitamins. Here are vitamins: A, В1, В2, В6, C, Е, K, РР, carotene, micro elements (iodine, manganese, magnesium, molybdenum, copper, boron, etc.) and organic acids (apple, folic, lemon, sorrel), and also sugar, fibers, carbohydrates, cellulose. Plant juice contains the substances calming nervous system.
Pumpkin
Homeland is Northern and South America. The pumpkin on 90 % consists of water. Other percent include: vitamins C, В1, В2, В6, Е, РР, carotene, nicotine acid, carotinoids, fibers, cellulose, pectin substances, organic salts of iron, phosphorus, starch, sugar. In seeds many valuable oils, salts of zinc and vitamin E are containing. In a pumpkin vitamin Т is found out that promotes acceleration of exchange processes.
On the average, you can eat on one and half kilograms in a day of all listed vegetables and 2 potatoes. Make salads with a small amount of vegetable oil, kefir, or low-fat sour cream. It is possible to prepare lean vegetable soup, steam vegetables or bake them with minimum additional fats.
Beside vegetables and greens it is possible to eat 1 – 2 fruit in a day, excepting bananas (it is better if it will be green apple), rye or grain bread (1 – 2 pieces in day). Also it is possible to use every second day oat-flakes or corn-flakes. Low-fat and unsweetened dairy products, such as kefir, yogurt, sour cream, cottage cheese up to 200 grams in a day are recommended.
From drinks it is better to choose green tea without sugar, non-carbon mineral water, and natural vegetable juices. It is almost not strict vegetarian diet. Recently scientific have proved that such type of eating conducts to the most slim waist.
Duration of vegetable diet is 1 month. For this period you will manage to get rid of 5 to 20 pounds of weight. Autumn is the best time for such diet. To practice it is possible one – two times a year.
This diet is good because of quantity of cellulose which helps to prevent diabetes, reduces cholesterol level, struggles with inflammatory processes in intestines, and is necessary for preventive maintenance of cancer of thick gut. Vegetables and fruit are vitamin-rich, macro- and micro elements that will help you look fresh after mentioned diet. Not without reason vegetables and fruit are entered into basis of diet of youth.
Try drinks of beauty on the basis of vegetable juices and admire the reflection in a mirror:
Restorative: mix 2 glasses of fresh tomato juice with the same quantity of kefir (or curdled milks), add 1 table spoon of any small cut greens, add salt and sugar after taste. Drink beverage in the mornings and in the evenings after meal within two weeks.
The rejuvenating: mix 2 parts fresh tomato juice with 1 part of the cucumber juice. Drink 1 – 2 table spoon of vegetable mix few times in day after meal. Course is for 2 – 3 weeks.
